Do I really need an Instant Pot?

For the longest time I resisted getting an Instant Pot. I truly thought it was overrated and yet another kitchen gadget I wouldn’t end up using after the first or second time.

Since getting our Instant Pot last November, everything has changed. I am able to cook healthy meals for our family in a fraction of the time that it takes me stovetop or in the oven.

Part of the struggle with cooking is I dislike the mess it creates after. Dishes are not my strong point and Having everything cook in one pan means less cleanup for me in the long run.

The perfect, simple French Onion Soup recipe!

Today I am sharing with you a simple recipe I made one rainy morning last week. I was craving french onion soup and I knew there had to be a quick way to make a big batch.

Sure enough. A few ingredients and the Instant Pot to the rescue, I had fresh French Onion soup in under 35 minutes. I chose not to add cheese to the soup, but that is only for personal preference.

If you would like, you can toast a couple slices of bread and add some cheese to your French Onion Soup!

Instructions
  1. using "Saute" function, let the Instant Pot heat up for 2 minutes.
  2. add the ghee or plant based spread & let melt.
  3. add the onions and salt. Stir occasionally until onions are brown (15-25 minutes). Scrape the bottom of the pot often to keep it free from any burnt bits.
  4. Add in the arrowroot and stir.
  5. Add in stock, wine, coconut aminos, apple cider vinegar, and Italian seasoning.
  6. Lock the lid in place and make sure the steam release handle is set to “Sealing”.
  7. cook in Manual mode—-High Pressure—-10 minutes.
  8. Allow for 5 minutes of a natural release. After 5 minutes flip the valve for a quick release.
  9. Your soup is ready. I make a large batch of this soup, sometimes double, and store it either in the refrigerator or freezer during the winter months.
Recipe Notes

You can make this recipe on stovetop. Follow the steps in your pot on the stove, but you will want to simmer the soup for 45-60 minutes.
