I am on a hunt!!

A true adventure, hunt, a quest if you will to find sugar-free, junk-free snacks for my toddler. I cannot believe how difficult it is to find on the go snacks for not only children, but adults also. When I say on the go snacks, I am thinking snacks that I can take with me on adventures that don’t have additives, chemicals, and processed sugar.

Children’s Food Doesn’t Help Children

Isn’t it so sad that companies are making snacks for children with processed chemicals that have been linked to ADHD, obesity, and cancer? I stood in the snack bar aisle the other day looking for a grab and go snack for my little one. I must have looked at the ingredients for 20+ different bars and we left with nothing.

So, I decided I will just have to make our own snacks for our family. Much like meal prepping, making our own snacks ahead of time will allow me to have healthy options on hand. More importantly, I will have snack options I can take with us for when we are out and about.

Simple Snacks for the Busy Mom

These chocolate brownie cacao balls were so simple to make and my little one loves them. A word of caution, although dates are a natural form of sugar and have vitamins and minerals, they are still a form of sugar. I opt for natural sweetness whenever possible, but I still limit the amount of sugar, even from fruit.

Anyways, these balls were made with simple ingredients. I added nuts and hemp seeds to the outside for an extra source of healthy fats and plant protein.

Feel free to get creative with this recipe and use what you already have in the house. It is really hard to mess this one up!

Instructions
  1. Soak the dates in warm water for 5 minutes. This will help soften them. Dry them on a towel after.
  2. While the dates are soaking, take the ingredients for the coating and put them in the blender. Pulse the seeds/nuts until they are well combined and chopped. *be careful, if you run the blender for too long of a period, you will end up making seed/nut butter. Short pulses are best for this*
  3. Dump the seeds and nuts on to a plate and set aside. Clean or wipe out your blender.
  4. Next add the nuts and cacao nibs to a blender or food processor. Pulse until the nuts are finely chopped. This will take about 30-60 seconds or a few pulses.
  5. Add the soften dates and cacao powder to the blender. Blend everything together until well combined. You will have to stop to scrape the dates off of the sides of the blender.
  6. Line a baking sheet with parchment paper. Using a small spoon, scoop out some of the date mixture and roll balls 1" in diameter. Place them on the parchment paper.
  7. Take the balls and roll them in the seed/nut mixture until they are fully coated. Place them back not the baking sheet. When all the balls are coated, place the baking sheet in the refrigerator.
  8. After an hour or so, you can move the bites in to a glass container for storage. They store best in the refrigerator.
