Today is the day my little one is turning a whole year old. I cannot believe this day is here already!

Just last year we were waiting for his arrival and now we are celebrating his 1st Birthday.

To celebrate his 1st Birthday, we decided not to have a big birthday bash for him. Instead we will celebrate small and take lots and LOTS of cute photos! 🙂

I did make him a birthday cake, though.

A Healthier 1st Birthday Cake

If you’ve been following me for awhile, you know that I am really picky about what is in the food we are eating. Specifically I am very conscious of the ingredients that are in the food my family is eating.

I wanted me son to have the celebration mode of a birthday cake, but I didn’t want him to have the refined, processed sugars or toxic food dyes. So, I decided I would make him a simple cake using ingredients I felt comfortable with, fruit for sweetness, gluten free, no egg, and no-dairy.

He absolutely LOVED IT! I didn’t serve him the whole cake. I found that he enjoyed it more when I cut a slice for him to eat. I served him some of the leftover cake as a snack for the next couple days, too.

A Couple Notes About this Cake

I have shared the recipe with you below. Here are just a couple of my notes. This cake as baked is more dense than a traditional birthday cake. Coconut flour tends to add a little more density to baked goods. I describe it as a lightly sweet banana bread.

Originally I was going to use organic whole wheat flour, but last minute I opted for organic buckwheat flour. If you want to use whole wheat flour, you can and it is the same measurement as listed below.

I also made two layers using a spring form pan. I poured half of the mix in the pan, baked it for 20-25 minutes. I made sure when I stick a toothpick in, it was clean, without any batter on the toothpick. I put the layers together with a little coconut whipped topping and banana in the center.

My son loved the coconut creme whipped frosting. It was so simple to make and he loved to eat it from a spoon.

I may or may not have eaten a lot of the leftovers myself, also! 🙂

Dairy Free, No Added Sugar First Birthday Cake

No Sugar Added, Dairy Free, Egg Free Cake (for Baby’s First Birthday)
This birthday cake recipe is perfect for your little one's first birthday. I used this first birthday cake recipe for my Son's first birthday. It is naturally sweetened with fruit, has no eggs, and has no dairy.

Coconut Whipped Frosting
Instructions
Make the Cake
  1. Preheat your oven to 400 degrees F.
  2. In a medium mixing bowl, mash the bananas. I use a hand mixer to get them silky and mashed.
  3. In a separate bowl, combine the flours, baking soda, and cinnamon. Stir in the applesauce, coconut oil *melted*, and vanilla to the flour mixture. Once combined, fold in the bananas.
  4. You might need to add water until you have a batter like consistency. I use about 1- 1 1/2 cups of water.
  5. Coat your pan(s) with coconut oil. (I used a spring form 8 inch pan and split my batter in half for two layers)
  6. Using a spoon or measuring cup, scoop the batter in to the pans.
  7. Bake for 20-35 minutes. This depends on the type of pan you are using and if you are creating layers. If your pan is deep, you will need a longer cook time. I highly recommend making two layers if your pan is deep or make a cake that is larger surface wise instead of taller.
  8. Take the cake out when it is done. You will know that the cake is done when you insert a toothpick or butter knife in the center and it comes out clean. Start this process around 20 minutes and add time as needed.
Frosting
  1. Scoop out the thick coconut cream from the top of the coconut milk can. You do not want any of the liquid from the can. Sometimes it is easier to open the can from the bottom, pour the liquid in to a jar to use later for smoothies and scoop out the cream.
  2. Add the vanilla and use an electric mixer until the coconut cream resembles whipped frosting (about 5-10 minutes)
  3. Once the cakes have cooled add a layer of the coconut frosting and *optional* sliced bananas on top of one cake and top with the other cake. Coat the cakes with the whipped coconut milk and decorate as you wish.
  4. FYI... the vanilla in the frosting will eventually show in brown areas on the cake. Either omit the vanilla or make the frosting just before serving. You can also use a natural means of coloring your frosting... spirullina is great for green, beet root powder or freeze dried strawberries ground make pink... a little turmeric for yellow.
